About the pied bleu:
The pied bleu is also recognized a fungus basidiomycete and commonly known as blue stalk mushroom. This mushroom mainly grows at end of woods and deciduous woodlands in winter. We can find this mushroom such Europe countries- France, Britain, Netherland. Blue foot mushrooms are dry, velvety and cultivated a large scale in United States.
Description of pied bleu:
Pied blue mushrooms can range lilac to purple-pink and have a hue of striking blue with silky consistency. They have a great texture, stems and gills are purple tone. The mature specimens are dark color with flatten cap. The younger ones are convex cap in 5-10 cm with rolled margin, nippy, lilac to purplish blue. The feet are cylindrical, bulbous, robust but becoming hollow and 5”-10” long. Blades are brown, dull and more vivid. The fleshes are tender and more fruity odour. These mushrooms are edible and used with game and meat dishes.
Storage of pied bleu:
This mushroom is stored in 0-3 degree C in refrigerator for 5 days. Should not clean pied blue with water, only wash with dry clothes. It should keep in the ventilated container in the refrigerator.
Taste and use of pied blue:
Clean and wash the blue feet then you should cook. You can’t take the raw mushroom. Blue feet mushrooms are best suited for the applications such as grilling, stewing, roasting and sautéing. This mushroom has an aromatic fruity flavour. Pied mushroom’s taste is good and serve with the pasta, omelette. They have a great texture and wonderful sliced into omelette with red onions and garlic. Pied bleu also can be pickled to serve as a salad.
