About Judas Ear:
Judas Ear is known as Jew’s ear that is species of Auriculariales fungus found in worldwide. This mushroom grows on specifically on living and dead woods or deciduous trees in Belgium, Netherland. This is a versatile mushroom and occurs in monsoon and humid condition in large clusters. They are also known as ear fungus, wood ear and Hirneola Aurecula-juda. It is one of the jelly fungi are Basidiomycota with jelly like structure. They are easily available to any food store, market or large grocery store as a dried mushroom.
Description of Judas Ear:
The auriculariales are characterised in brown color with tough, rubbery consistency. They are grilled mushrooms are members of Tremellales, Basidiomycetes and Eumycota family. The fruity body of this mushroom is distinguished by its ear like structure brown color combination. This mushroom is 3-15 cm wide and ear or cup shaped and yellow to reddish brown color. The outer surface of the lobed fruity body is tan brown with purple tinge and smooth inner surface. The spores are white and sausage shaped, translucent and thin flesh. In Australia the fungus grows on Eucalyptus trees in end of Autumn. They have been found in Scotland and UK. It has very light flavoured and gelatinous texture that makes it more easily chewed and dried.
The fresh unwashed Judas Ear is stored in refrigerator for 1 week. They are kept in dry place up to 1 month.
Taste and use:
Wash the mushrooms quickly in clean water then should soak them with any warm towel in 10 mints, then used for cooking. Sautee or fry this mushroom for 5 mints and cooked this in oil for 10 mints. They can be eaten raw or cooked and served with pasta, salad, vegetables, stews and soup. This also used in the crisp, snappy texture and sliced in ¼ inches strips for cooking.
